In this class, Baker Eleanor Taylor, will unfold her secrets on how to achieve the perfect butter pie crust. We will focus on the technical attributes of the crust making process from chilling to crimping, cutting, and layering lattice. You will begin to understand the fine details that go into making pie crust to implement in your home kitchen. Learn how to make crust in batches to get prepared for the holiday season and understand the many applications of the same crust recipe from fruit to custard, or savory combinations. End the class sharing a slice of Eleanor’s pecan pie and take home her prized recipes and a pie crust made especially by you.

Join Rogan Howitt, regionally renowned bartender and business owner of Springfield’s beloved Golden Girl, in learning how to craft three cocktails. Rogan will introduce you to the bartender’s basic tool spread and help you navigate a simple back bar to produce a classic celebratory spread of seasonal cocktails. By the end of the class you will have learned the three major ways to prepare a cocktail: stirred, shaken, and large format perfect for entertaining with flavors that explore the warmth of this special time of year.

In this class you will learn the basics of homemade bread baking with a holiday Scandinavian twist. Chef Anna will take you through her tried and true recipe for julecake, a holiday bread sweetened with honey and spiced with cardamom. You will weigh ingredients, mix and rise your dough and practice pinching, rolling, shaping and scoring techniques. While your bread is baking you will whip up fresh berry preserves. We will end the class garnishing a warm slice of bread with whipped butter, Scandinavian cheese, and lingonberry preserves. You will take home your loaf of bread and homemade preserves.

Eleanor will share her crust recipe and secrets to making the perfect pie that is sure to impress everyone around your table. You will learn which essential tools you need in your kitchen for pie-making and Eleanor will walk you through the techniques involved in rolling and shaping the crust, making lattice, peeling apples, assembling your pie, and egg washing your pie. The class will end with a slice of freshly baked caramel apple pie!
